LOW TEMPERATURE COOKING
With this technique we try to preserve all the organoleptic properties of fish, by adjusting times and temperatures in order to let that flavor and essence remain intact at the time of tasting.
Traceability is very important for us, since it is essential that consumers could have all the possible information of what they are eating. For this reason, all our cans are numbered and are accompanied by additional information about the origin and history of the fish. A kind of Curriculum Vitae of the fish. We all have the right to know what we eat and so we provide all this information for our costumers.
A very important matter that production process must respect to the maximum. That is why we have equipped our workshop with a modern ozonation system to purify the air in the working area and the running water, which passes also through a decalcifier. In this way we achieve to completely eliminate the bacterial load that can contaminate the fish.
Moderate consumption of fish is very beneficial for health since it provides proteins with high biological value, vitamins, minerals and essential fatty acids. In addition, all our products are gluten free and they have been sterilized by heat treatment.
